Guajillo Test Crema

A smoky, citrus-forward Mexican-style crema featuring The Guajillo Test hot sauce. Creamy, tangy, and packed with flavor, this simple sauce adds the perfect finishing touch to tacos, enchiladas, burrito bowls, grilled meats, and roasted vegetables.


Prep Time: 5 minutes
Yield: About 1½ cups

Ingredients

  • 1 cup Mexican crema (or sour cream)
  • ½ cup The Guajillo Test hot sauce
  • 1 tbsp fresh lime juice
  • 1 tsp fresh lime zest
  • Pinch of kosher salt

Instructions

  1. Add Mexican crema to a mixing bowl.
  2. Whisk in The Guajillo Test hot sauce until smooth.
  3. Add lime juice, lime zest, and salt.
  4. Mix until fully blended.
  5. Refrigerate for 15–30 minutes before serving.

Pair It With

Drizzle over street tacos, enchiladas, carne asada, carnitas, chicken tinga, fish tacos, burrito bowls, grilled vegetables, or anything that could use a little extra flavor.

Chef's Note

Traditional Mexican crema creates the smoothest, most authentic texture and a beautiful restaurant-style drizzle. Sour cream works as an excellent substitute and produces a slightly thicker, tangier sauce.

Mad Hopper Tip: Make it ahead of time and let it chill for 30 minutes before serving. The lime and Guajillo flavors meld together and create an even richer, more balanced crema.
